Millet Khichdi

Khichdi is a traditional Indian dish that is wholesome and is enjoyed throughout the country, irrespective of the region. Millet khichdi is essentially prepared using whole grain millet, dal, leafy greens, and vegetables. The north Indian version of khichdi is made from rice and legumes, although millet khichdi is steadily gaining popularity in recent times, thanks to its myriad health benefits.


Making millet khichdi is easy. To start, wash half a cup of millet and half a cup of dal thoroughly. Soak them together in water for about an hour. Remember that the longer you soak them, the softer they’ll be and the quicker they’ll cook. Use a colander to drain them later. Now, heat a pressure cooker and add two tablespoons of ghee in it. Once the oil is moderately hot, add half a teaspoon of cumin seeds and a teaspoon of grated ginger to the cooker. Cook the mixture till it splitters.

Now, add all the chopped veggies of your choice, such as tomatoes, beans, carrots, capsicum, and peas. Saute them for a few minutes on medium flame. Then, add a teaspoon of red chili powder, half a teaspoon of garam masala, and a teaspoon of turmeric. Cook the mixture till the tomatoes get mushy. Now, add the drained dal and millets. Cook it for a few minutes and add salt as per your taste. Add two and a half cups of water to the cooker. Close the cooker and allow the khichdi to cook until you hear three whistles.
